From the Ball Book of Home Preserving

10 lemons--5 juiced, the other 5 in quarters
4 cinnamon sticks
1/2 cup salt--no iodine in this salt!
8 bay leaves
2 tsps. whole black peppercorns

Toss the lemon quarters in the salt.
Then divide everything between 2 quart jars (sterilized before you load them), including the salt left over from tossing the lemons in salt.
Fill to within half-inch of top of jar.
 Put lid on and ring. Close finger-tip tight. Shake up and then place in dark spot or in brown bag. Turn jars upside-down once per day to redistribute salt.
