Put a Lid on It: salmon soup once more
Instant pot
1 pound wildcaught salmon
Two sticks of butter (equals half pound)
One cup sour cream or heavy whipping cream or 8 ounce brick of cream cheese.
1 tablespoon capers
1 tablespoon juice from caper jar
1 tablespoon lemon juice
1.5 teaspoons Worcestershire sauce
In the instant pot, Sauté salmon with first stick of butter – – three minutes on each side.
Set the pot to manual, Add second stick of butter, and then set timer for five minutes and cook.
Natural pressure release.
Put everything else in a good strong blender. Food processor would also work.
When the salmon is finished cooking, add the salmon and all the butter.
Blend and enjoy right away hot or steal tablespoons from the fridge when it gets cold and can be used also as a dip.
