Easy Sour Cream Cherry Pie




The recipe for Sour Cream Cherry Pie:

Preheat oven to 325. 
Graham cracker crust
2 cups pitted, fresh cherries
2 eggs
3/4 cup sugar
3/4 cup sour cream.

Beat eggs, then add sugar and sour cream while still beating. It will be very liquid. Add cherries and mix well. Pour into 9" pie pan with a graham cracker crust, and cook until custard sets--at least an hour, but mine here T 3800 feet above sea level needed 1 hour, 40 minutes. Edges will brown--let that baby get firm in the middle!

Eat right away, very hot or chill and eat later, very cold. Easy and delicious. 1/8 pie is 290 calories.

Making a crumb crust is mindless, so go get the recipe out of any standard cookbook or buy a ready-made. 

It is DELICIOUS, but Custard pies don't ship safely, so please stop asking me to send slices. This is right out of the Joy of Cooking. You can substitute in any berries.

192: Yarnover Girls! Notes

The Yarnover Truck stopped by for a weekend visit at the local quilt show.

Summer Mindfulness Retreat in Camarillo, CA: July 25, 2014. $50 to attend. We are taking names for the wait-list.
Game plan:
Limited to 10-15 people
Mindfulness lessons, meditation, self-hypnosis training by the ocean.
Road trips to local yarn shops.
Road trips to local high-end outlet malls.

Info is here. Come have a fun weekend by the sea of meditation, mindfulness, and shopping with your fiber-buddies! We are going to have a mellow, fun, relaxing few days together to feel good and hang out.)

Philly Camp CogKnitive is still in planning stages--no date yet. Hotel and other suggestions welcome.

CO 56
1-1 rib for 2 inches
row 1-2: knit
row 3-4: K2P2
The Linen Stitch Cowl
CO 288 stitches--really, you need to CO an odd nuber to really make this work.
5 rows in ST St
K1, yarn to front, slip 1, move yarn to back. Slip as if to purl.
When enough rows, do 5 more rows of St st and bind off.

Strategy:
Manage your body without letting its size dominate your self-image. If your body feels wrong, fix it, but that does not mean self-hate is okay.Meanwhile, ignore the jerks--they should not have the right to drag you down, so don't let them.

Put a Lid On It:
See the Pinterest account for the Kale salad recipe. Homemade strawberry freezer jam is done for the year. More strawberries are on tap in my freezer to make the canned jam later this summer. Freezeing fruit is a fine way to help break down cell walls and make fruit more easily crushed for jam.
Currently in season: cherries, peaches, nectarines, plums, early apricots.

Aw Shoot!
Weight loss has slowed as I add muscle in my upper body. I've reached a moment in my plan where other people are telling me how different I look. Ah, the payoff of sticking with the program for a few months.
Runners World tells me that I could train for a half marathon. They have some good training schedules at www.runnersworld.com.

Despite the class-action suit against Vibram (which was filed by someone who never actually used the shoes), I still love mine. I wear them for everything except running because I do not want to reduce my distance in running to acclimate to barefoot running.

No spinning, due to sinus issues.

Strategy:
Mother Nature is a b*tch--as in, she does not care about your reasons; she will stillhold your body accountable for your behaviors--in exercise, relationships, career, and in all sorts of other ways. You really must take care of your life and your health.

Put a Lid On It:
I have been making freezer jam! Make sure to get INSTANT PECTIN for this--no other type will work. 4 cups crushed fruit, 1.5 cups sugar or Splenda, 1 packet pectin. For peaches and nectarines, you need 3 tablespoons lemon juice too.

This is SO easy that you really should give it a try. Use spare Tupperware and plastic containers from butter or yogurt.

I am getting past Achilles tendonitis, using the elliptical for 65 minutes at a time, and brushing my pony every morning.

Eleanor is taking basic obedience class and doing VERY well. My schedule is now, officially, insane.
